Homegrown Japanese eatery – Sushi Tei, celebrates the opening of the latest addition to its chain of restaurants, with the opening of the Sushi Tei – Raffles City outlet. Commemorating the occasion, a new and ‘special menu’, will be exclusively available at the new outlet, much to the culinary satisfaction of its diners – supplementing the already gastronomical array.

Set-up at a cost of approximate S$1.3 million and sized at 5,200 sq-ft, the new Sushi Tei outlet is able to sit 200 pax and is located on the third floor of the Raffles City Shopping Centre. Food connoisseurs to the Sushi Tei - Raffles City outlet will be greeted by the serenity and exclusivity of a private alcove; conjuring to an exceptional dining experience amidst the avant-garde interior décor and adjustable mood lightings.

The exclusive and elevated walkway fronting the entrance of the Sushi Tei – Raffles City outlet, is an apt prelude to the splendid environment within; diners are drawn immediately to Sushi Tei’s über-modernistic and cosy setting, accompanied by the smooth sounds of a cascading water feature as they meander into the restaurant. A wine cellar, fronting the dining area and unique only to the Sushi Tei - Raffles City outlet, seeks solace to the taste buds of decadent diners and profiles the Japanese eatery’s continual stance in being sensitive and progressive, to addressing the distinctive palates of its patrons.

Apart from the well-known open-kitchen concept embraced by all other Sushi Tei restaurants, the seating segments at the Sushi Tei – Raffles City outlet are thoughtfully differentiated with the employment of varying furniture, fittings, and the use of clever lightings.

Diners select at their pleasure, to savour the artful Japanese cuisine in various seating pockets that mirror their tastebuds of the day; get comfortably seated at one of the three private VIP rooms; snugly acquainted at lovers’ corner for a more intimate dining experience; whilst round tables segregated by the use of string curtains create a heightened dimension and sophisticated environ to patrons’ dining session. Mood lightings are employed to engineer the lighting effects of each sectionalised area, to day and night. This themed fragmentation of seating sectors is an inaugural effort of Sushi Tei.

Supplementing the urbane and chi-chi outlook, the clever and novel use of glass, wood and fabrics – married with the sweet aroma of miso, distills an arousing and tantalising Japanese flavour, setting a memorable reminiscence to Sushi Tei’s authentic Japanese cuisine.

1. Sashimi Moriawase - Six Assortments of Sashimi
The dish that encapsulates the taste of the ocean, the freshness of the fish continues to pique the imagination of true Japanese cuisine lovers. Air flown and artfully prepared by skilled chefs, the Sashimi Moriawase dish sets forth a sense of expectancy of other delicacies offered by Sushi Tei.

2. Salmon Wafuu Carpaccio - Japanese Style Salmon Carpaccio
The delightful mix of fresh salmon sashimi, divinely drenched in homemade Carpaccio sauce, sesame, vinegar and soy sauce, makes for a sensational rousing to the taste buds. The generous garnishes of alfalfa sprouts and onion lend a crunchy variation to the raw fish delight.

3. Ikura Chawanmushi - Fresh Salmon Roe on Chawanmushi
Enjoy each burst of the fresh salmon roe on your tongue as you let the soft, warm concoction of Ikura Chawanmushi slide down your throat, leaving a velvety aftertaste of smoothness and saltiness. Bits of shitake mushrooms in the egg add lovely accents to the dish.

4. Dai Dai Roll - Crab Stick, Salmon, Mango Special Sushi Roll
Dai Dai (Japanese for ‘orange’) roll plays on the usual way sushi is prepared. Fresh salmon envelopes a combination of seaweed, fragrant sushi rice, crab stick and sweet, ripe mango, with twin colour sauces created using orange juice, chili and mayonnaise to lend piquant flavours to the dish.

5. Salmon Wasabillar Roll - Salmon, Asparagus Sushi Roll with Wasabi Tobikko
The green Wasabi Tobikko skillfully cocoons the fresh ingredients of Australian asparagus and cooked salmon, sending waves of sensory tingles with bursts of the tobikko and the tantalising effects of wasabi.

6. Fried Seafood Roll – Fried Seafood Sushi Roll
The combination of cheese, vegetable and ebi tempura, fried in tempura-style represents the creativity of the culinary experts at Sushi Tei, in the fusing of varied methods of food preparation. Tangy saltiness meshes with a buttery aroma, melting each morsel as it is being delightfully savoured.

7. Hokkaido Ishikari Nabe – Hokkaido Style Hot Pot
A Hokkaido-style hot pot, Sushi Tei rolls out this dish as one of the signature items in Hokkaido. Generous portions of Taraba crab, salmon, potato, cabbage and mushroom boiled in miso-based soup serves as a wonderful comfort food, the flavorful tastes sending warm thrills to one’s heart.
